I looked up palm wine because I never really understood if it was alcoholic or not. Apparently it is a sap that comes out a tree in a sweet and white form. It starts fermenting as soon as it is let out of the tree. Within two hours, the sap has a 4% alcohol content level. It eventually turns from a strong wine (up to a day of fermentation) into a vinegar. Here is a video I found of someone tapping into a tree to get palm wine.
I wouldn't have thought that they would still harvest palm wine the same way they did over a century ago. That information makes things a lot clearer; I really wasn't sure if it had alcohol or not. It was described well in the book, but it was really interesting to see how they actually harvested the palm oil.
